The Opportunity

We're seeking a creative, hands on Pastry Sous Chef to join our team at Lincoln Ristorante, our fine dining Italian restaurant at Lincoln Center.

Responsibilities
  • Oversee the daily production of the pastry and or dessert program at their venue.

  • Maintain the pastry and dessert menu for their restaurant concept, utilizing all products and food ingredients with a sense of artistic talent.

  • Assist in recipe development, portion specifications, and establish standard preparation procedures for all assigned dishes.

  • Be willing to gain knowledge of and maintain company invoice tracking, labor tracking, schedule preparation, food cost management, labor cost management, inventory control and hiring/counseling/termination policies.

  • Acknowledge and comply with all company policies, service procedures, and standards.

  • Assist the head chefs with hiring, training, and monitoring the pastry team; continuously motivate and support employees as necessary.

  • Lead and cook/bake/create by example.

  • Work cohesively with co-workers as a part of a team or with minimal supervision and complete all necessary kitchen and administrative tasks.

  • Maintain complete knowledge of and participate in the correct maintenance and use of equipment. Use equipment only as intended and ensure employees follow suit.

  • Regularly inspect units to observe quality of food preparation and service, food appearance, cleanliness and sanitation of production and service areas, equipment, and employee appearance.

Qualifications
  • Minimum 5 years' experience as a Pastry Sous Chef in a restaurant with a similar style of dining, capacity, and volume.

  • Culinary Degree preferred.

  • Servsafe, Food Safety Handler, and Training for Intervention Procedures (TIPS) certification required.

  • Ability to fully understand and interpret profit and loss statements (P&L); ability to understand and organize budgets and orders for supplies.

  • Has passion for pastry and culinary excellence and is eager to improve their skills and share their craft with subordinates and guests.

  • Possess strong communication skills to engage, educate and uphold utmost hospitality towards customers and fellow employees.
